Microwave Pudding

A lot of what I have been doing to occupy my time lately has been cooking and trying new recipes. Recently, I discovered a recipe for chocolate pudding made from scratch in the MICROWAVE! I know, I can't believe it either.

So anyway, this is my blog, and I am gonna do whatever I want with it, and right now I want to share this recipe.

Microwave Pudding
3/4 cup sugar
2 TBS cornstarch
1/4 tsp salt
2 cups milk
2 oz unsweetened chocolate
1 well beaten egg
2 TBS butter
1 tsp vanilla

1. Mix sugar, cornstarch and salt in one quart microwave safe bowl. Slowly add 2 cups of milk, whisking to prevent lumping.
2. Microwave on high power for 6 minutes, stirring every 3 minutes. Pay close attention, because if you are not paying attention it will boil over.
3. Add 2 oz chocolate, stirring vigorously to blend.
4. Temper egg by adding a small amount of pudding to the egg. I usually add about 3 big spoonfuls. Add egg&pudding mixture to pudding. Whisk together well.
5. Microwave an additional 6 minutes on Power 7, stirring every two minutes, or until desired thickness is reached.
6. Add butter and vanilla, mixing well.
7. Serve hot or cold. ENJOY!!!!
